Recipe: Sweet Potato Bread

Lizzie and I have been in our new place for a few days now.  And while I can’t wait to post cute-sy photos of the fully decorated and glamified apartment it is still currently a mess.  I guess we’re just slow “nesters” or whatever, probably because we both suffer from extreme indecisiveness.  Together we can hardly order a pizza with any toppings.

However, to make myself feel somewhat productive and domestic I decided to make some sweet potato bread.  And while it’s not quite fall yet, it was sweater weather in Chicago yesterday, so making cinnamon-y, potato-y treat is wholly justified.


  • 1 cup of cooked and mashed sweet potatoes
  • 1/2 cup canola oil
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp of ground cinnamon
  • 1 tsp of nutmeg
  • 1/3 cup water
  • 3/4 cup semi-sweet chocolate chips

IMG_4143Combine the oil and sugar, mixing well.  Then stir in the eggs.  In a separate bowl combine the flour, cinnamon, nutmeg, salt, and baking soda.  Slowly add to the sugar/oil/egg mixture, while also intermittently adding the water.  Throw in the sweet potatoes and chocolate chips and stir it up.

You can pour the batter in 2 bread loaf pans, but I just used a 8×8 pan and then cut into 2 pseudo-loaves.  Bake for about an hour at 350* and then let cool.  Then give to your friends so they like you more!
