Recipe: Cloud Cookies

Last week my mom sent me a care package that can only be described as the most bizarre care package ever. She sent random clothes, suede cleaner, a couple of ice trays, a few crystals I left at home, and this beauty: the Wieberg cookbook.

My mom’s side of the family is known for their skill in the kitchen, especially when it comes to baking. I was thrilled to get this cookbook and try out a new recipe as soon as possible. I found a recipe submitted to the book by my Grandma called “Cloud Cookies” and decided it was “Da One.” Gooey Butter Cake is definitely my specialty, but these are coming in a close second now.

Here’s how you make these puppies:

COOKIES:
1 cup butter
3/4 cup cornstarch
1/2 cup powdered sugar
1 cup flour
1 teaspoon vanilla
1/2 cup pecans, finely chopped.

ICING:
1/2 stick soft butter
3 oz. softened cream cheese
1 teaspoon vanilla
2 cups powdered sugar

For the cookies, cream all of the ingredients together, adding the pecans last. Drop the dough from a teaspoon onto an ungreased cookie sheet. Bake for 20 minutes in 320 degree oven. Cool and top each cookie with cream cheese icing…and here’s how you make that (it’s crazy easy): make sure all the ingredients are soft, mix well, and then put on top of your cookies, and enjoy!
